Fattoush Salad


Although traditionally Lebanese in origin, Fattoush Salad is very common throughout the Middle East. It’s a family style salad you can really dig into. Chock full of delicious ingredients and textures. We serve this at pretty much any occasion where we have a large crowd to feed. This version is vegan and eliminates the feta cheese.

Serves 8-10

Ingredients:

For the Salad:

  • 4 bundles romaine lettuce, washed, dried and chopped

  • 2 English cucumbers, peeled and chopped

  • 4 large tomatoes, chopped

  • 1/4 cup red onion, peeled and finely chopped

  • 1/4 cup dill pickles, chopped

  • 1/2 cup pepperoncini, chopped

  • 1/2 cup pomegranate seeds (fresh not frozen if possible)

  • 1/2 cup Kalamata olives, pitted

  • 1/2 cup walnuts, lightly toasted

  • 1/4 cup fresh mint, chopped

For the Dressing:

  • 1 cup olive oil

  • 2 tbsp balsamic vinegar

  • juice of 1 lemon

  • 1/2 cup Kalamata olives, pitted

  • 2 garlic cloves

  • 1 tbsp cumin

  • 1/2 tsp salt

  • pepper to taste

Instructions:
  1. Toss all salad ingredients in a large bowl and set aside

  2. Place all dressing ingredients in a food processor or blender and purée

  3. Right before serving, drizzle dressing over the salad, toss and serve
